Healthy Blueberry Baked Oatmeal (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 2 3/4 cups old fashioned rolled oats
02 - 1 1/2 tablespoons chia seeds (optional)
03 - 1 teaspoon baking powder
04 - 1/4 teaspoon fine salt
05 - 1/2 teaspoon ground cinnamon
06 - 1/4 teaspoon ground nutmeg

→ Wet Ingredients

07 - 1/3 cup maple syrup or honey
08 - 1 ripe banana, mashed (about 1/2 cup)
09 - 2 large eggs
10 - 1 1/2 cups milk of choice
11 - 1/4 cup melted unsalted butter or coconut oil
12 - 2 teaspoons pure vanilla extract

→ Mix-ins

13 - 1/4 cup sliced or chopped almonds, plus more for topping
14 - 1 1/2 cups frozen blueberries

# Instructions:

01 - Preheat oven to 375°F and spray a 9x9 or 8x8-inch baking dish with cooking spray.
02 - Combine all ingredients in a bowl and mix well until everything is evenly incorporated.
03 - Pour mixture into prepared baking dish. Add extra frozen berries and sliced almonds on top if desired.
04 - Bake for 30-35 minutes until the center is set. Let cool for 10 minutes before serving.

# Notes:

01 - Can be made egg-free by using 2 tablespoons ground flax mixed with 5 tablespoons water
02 - Keeps in fridge for up to 1 week or freezer for 3 months
03 - Can use fresh or frozen blueberries
