Cheesy Cauliflower Soup (Print Version)

# Ingredients:

01 - 2 Tbsp vegetable or avocado oil.
02 - 1 small yellow onion.
03 - 3/4 lb ham.
04 - 4-5 garlic cloves, pressed.
05 - 2 lb head of cauliflower.
06 - 3 Tbsp all purpose flour.
07 - 1 tsp dried sage.
08 - Salt.
09 - Fresh cracked black pepper.
10 - 1 bay leaf.
11 - 3 1/2 cups chicken stock.
12 - 1/2 cup heavy whipping cream.
13 - 4 oz sharp white cheddar cheese, grated.

# Instructions:

01 - Dice onion and ham. Cut cauliflower into small florets, discarding stem.
02 - Sauté onion in oil until transparent. Add ham and garlic, cook until fragrant.
03 - Add cauliflower and cook few minutes. Sprinkle with flour and mix well.
04 - Add stock, bay leaf, and seasonings. Simmer 20-25 minutes.
05 - Stir in cream and cheese. Cook few more minutes until cheese melts.

# Notes:

01 - Can be made gluten-free with 1:1 flour substitute.
02 - Keeps 3-4 days in refrigerator.
03 - Can be frozen but may separate when thawed.
