Grilled Salmon & Shrimp Alfredo (Print Version)

01 - 8 oz fettuccine pasta
02 - 2 salmon fillets (6 oz each)
03 - 1/2 lb large shrimp, peeled and deveined
04 - 1 tablespoon olive oil
05 - 2 tablespoons butter
06 - 2 cloves garlic, minced
07 - 1 1/2 cups heavy cream
08 - 1 cup grated Parmesan cheese
09 - Salt and black pepper to taste
10 - 1/2 teaspoon Italian seasoning
11 - Fresh parsley, chopped (optional for garnish)

# Instructions:

01 - Cook fettuccine pasta according to package directions. Drain and set aside.
02 - Season salmon fillets and shrimp with salt, pepper, and Italian seasoning.
03 - Heat grill or grill pan over medium heat. Drizzle olive oil on salmon and grill for about 4-5 minutes per side, or until fully cooked.
04 - Grill shrimp for 2-3 minutes per side until pink and cooked through. Set both aside.
05 - In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute.
06 - Pour in heavy cream and bring to a simmer. Stir occasionally for 3-4 minutes until slightly thickened.
07 - Add Parmesan cheese and stir until melted and sauce is creamy. Season with salt and pepper to taste.
08 - Toss cooked fettuccine in the Alfredo sauce until well coated.
09 - Plate the pasta and top with grilled salmon and shrimp. Garnish with fresh parsley if desired. Serve hot!
