01 - 2 cups plain Greek yogurt
02 - 1 large cucumber, grated and drained (about 1½ cups)
03 - 3-4 cloves garlic, minced
04 - 2 tablespoons fresh dill, finely chopped
05 - 2 tablespoons fresh lemon juice
06 - 2 tablespoons extra virgin olive oil
07 - 1 teaspoon white vinegar (optional)
08 - ½ teaspoon salt
09 - ¼ teaspoon freshly ground black pepper

# Instructions:

01 - Peel (optional) and grate the cucumber. Sprinkle with salt and let sit for 10-15 minutes to release moisture. Squeeze out excess liquid.
02 - In a bowl, combine yogurt, minced garlic, chopped dill, lemon juice, olive oil, vinegar (if using), salt, and pepper. Whisk until smooth.
03 - Fold the drained cucumber into the yogurt mixture until evenly distributed.
04 - Cover and refrigerate for at least 30 minutes to meld flavors.
