# Ingredients:

01 - 2 large chicken breasts, thinly sliced

03 - 60g freshly grated Parmesan cheese
04 - 120ml heavy cream

09 - 360ml chicken broth
10 - 200g long-grain white rice
11 - 2.5g fine sea salt
12 - 1.2g freshly ground black pepper
13 - 0.6g crushed red pepper flakes

# Instructions:

01 - Thinly slice the chicken breasts into uniform strips. Season thoroughly with salt, black pepper, and crushed red pepper flakes.
02 - In a large skillet, heat 15ml of olive oil and 15g of butter over medium-high heat. Sear the seasoned chicken strips in small batches until golden brown and cooked through. Transfer the cooked chicken to a plate and set aside.
03 - Reduce the heat to medium-low. Add the remaining 30g of butter to the same skillet and allow it to melt. Add the minced garlic and sauté gently for approximately one minute, until fragrant but not browned.
04 - Deglaze the skillet by pouring in the 45ml of fresh lemon juice and 120ml of chicken broth. Scrape the bottom of the pan with a wooden spoon to loosen any browned bits. Bring the mixture to a gentle simmer and reduce for 3 to 5 minutes, allowing the sauce to slightly thicken.
05 - Meanwhile, in a separate saucepan, combine the 200g of long-grain white rice with the remaining 240ml of chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
06 - Once the rice is cooked, stir in the 120ml of heavy cream and 60g of freshly grated Parmesan cheese until well combined and creamy. Taste and adjust seasoning with salt and pepper as necessary.
07 - Return the seared chicken strips to the skillet with the garlic butter sauce. Gently toss to coat the chicken. Allow it to warm through on low heat for about 2 minutes.
08 - Portion the creamy Garlic Parmesan Rice onto serving plates. Top generously with the chicken scampi. Garnish with the finely chopped fresh parsley and additional freshly grated Parmesan cheese, if desired. Serve immediately.
