Wash and quarter the baby potatoes. In a large bowl, toss them with 15 mL olive oil, salt, freshly ground black pepper, and 2.5 mL smoked paprika (if desired).

Preheat your air fryer to 200°C (400°F).

Place the seasoned potatoes in a single layer in the air fryer basket. Cook for 12-15 minutes, shaking the basket halfway through, until they are crispy and fork-tender. Set aside once cooked.

Pat the steak cubes dry thoroughly with paper towels. In the same large bowl, toss the steak with 15 mL olive oil, salt, and black pepper.

Add the seasoned steak to the air fryer basket. Cook at 200°C (400°F) for 7-9 minutes, shaking halfway through, for a medium-rare doneness (internal temperature of 57°C / 135°F). Cook in batches if necessary to avoid overcrowding.

Once cooked, remove the steak from the air fryer and let it rest for a few minutes to retain its juices.

While the steak rests, melt 60 grams of unsalted butter in a small saucepan or microwave-safe bowl. Stir in 3 finely minced garlic cloves, 5 mL Italian seasoning, 2.5 mL crushed red pepper flakes (if using), and 15 mL chopped fresh parsley.

Return the cooked steak bites and potatoes to the large bowl. Pour the prepared garlic butter sauce evenly over the mixture and toss to thoroughly coat all pieces.

Garnish with additional fresh parsley and serve immediately.
