Garlic Butter Steak Bites Potatoes (Print Version)

# Ingredients:

→ For the Potatoes

01 - 680 grams baby potatoes (Yukon gold or red), quartered
02 - 15 mL olive oil
03 - 2.5 mL smoked paprika (optional)
04 - Salt, to taste
05 - Freshly ground black pepper, to taste

→ For the Steak

06 - 680 grams sirloin, ribeye, or New York strip steak, cut into 2.5 cm cubes
07 - 15 mL olive oil
08 - Salt, to taste
09 - Black pepper, to taste

→ For the Garlic Butter Sauce

10 - 60 grams unsalted butter, melted
11 - 3 cloves garlic, finely minced
12 - 5 mL Italian seasoning
13 - 2.5 mL crushed red pepper flakes (optional)
14 - 15 mL fresh parsley, chopped

→ For Garnish

15 - Extra fresh parsley

# Instructions:

01 - Wash and quarter the baby potatoes. In a large bowl, toss them with 15 mL olive oil, salt, freshly ground black pepper, and 2.5 mL smoked paprika (if desired).
02 - Preheat your air fryer to 200°C (400°F).
03 - Place the seasoned potatoes in a single layer in the air fryer basket. Cook for 12-15 minutes, shaking the basket halfway through, until they are crispy and fork-tender. Set aside once cooked.
04 - Pat the steak cubes dry thoroughly with paper towels. In the same large bowl, toss the steak with 15 mL olive oil, salt, and black pepper.
05 - Add the seasoned steak to the air fryer basket. Cook at 200°C (400°F) for 7-9 minutes, shaking halfway through, for a medium-rare doneness (internal temperature of 57°C / 135°F). Cook in batches if necessary to avoid overcrowding.
06 - Once cooked, remove the steak from the air fryer and let it rest for a few minutes to retain its juices.
07 - While the steak rests, melt 60 grams of unsalted butter in a small saucepan or microwave-safe bowl. Stir in 3 finely minced garlic cloves, 5 mL Italian seasoning, 2.5 mL crushed red pepper flakes (if using), and 15 mL chopped fresh parsley.
08 - Return the cooked steak bites and potatoes to the large bowl. Pour the prepared garlic butter sauce evenly over the mixture and toss to thoroughly coat all pieces.
09 - Garnish with additional fresh parsley and serve immediately.

01 - For extra crispy potatoes, soak them in cold water for 30 minutes before cooking.
02 - Do not overcrowd the air fryer basket for optimal browning; cook in batches if needed.
03 - Use fresh garlic for the best flavor in the garlic butter sauce.
