Easy Baked Prawn Risotto (Print Version)

# Ingredients:

01 - 1 tablespoon unsalted butter
02 - 3 cloves garlic, minced
03 - ¾ cup arborio rice
04 - 2 cups chicken or vegetable broth
05 - 6-8 large tail-on raw prawns (peeled or unpeeled)
06 - ½ teaspoon sea salt

# Instructions:

01 - Preheat oven to 400°F.
02 - Heat butter in an oven-proof pot with a tight fitting lid over medium heat.
03 - Add minced garlic and cook for 1 minute. Add rice and cook for 1-2 minutes until fragrant.
04 - Add prawns, broth and salt to pot, stir well and bring to a boil.
05 - Cover with lid and bake for 20 minutes undisturbed.
06 - Remove from oven, stir and serve immediately.

# Notes:

01 - Must use arborio rice for proper risotto texture
02 - Risotto will be saucy if served immediately; may need additional liquid if served later
03 - Perfect for a romantic date night dinner
