Remove head and innards from mantle. Remove beak from tentacles. Clean and rinse thoroughly.

Place sliced squid in milk with salt, soak 15-20 minutes.

Heat oil to 365-375°F. Prepare wire rack with paper towels.

Mix flour, cornmeal, salt and pepper. Coat drained squid in batches.

Fry in batches 2-3 minutes until golden. Drain on prepared rack.

Serve immediately with marinara sauce or lemon aioli.
