Crispy Calamari (Print Version)

# Ingredients:

01 - 1 lb uncooked, cleaned calamari, cut into circles.
02 - 1/2 cup whole milk (or low fat buttermilk).
03 - 3/4 cup all purpose flour.
04 - 1/2 cup cornmeal.
05 - 1 tsp salt.
06 - 1/4 tsp black pepper.

# Instructions:

01 - Remove head and innards from mantle. Remove beak from tentacles. Clean and rinse thoroughly.
02 - Place sliced squid in milk with salt, soak 15-20 minutes.
03 - Heat oil to 365-375°F. Prepare wire rack with paper towels.
04 - Mix flour, cornmeal, salt and pepper. Coat drained squid in batches.
05 - Fry in batches 2-3 minutes until golden. Drain on prepared rack.
06 - Serve immediately with marinara sauce or lemon aioli.

# Notes:

01 - Can keep warm in 150-170°F oven between batches.
02 - For whole squid, buy 1.25-1.5 lb to account for waste.
03 - Optional lemon aioli: Mix mayo, garlic, lemon zest and juice.
