01 - 1 package of English muffins
02 - 8 eggs
03 - 1 lb breakfast sausage
04 - 8 oz mild cheddar cheese, thinly sliced

05 - 2 cups milk
06 - ¼ cup sausage drippings (add butter if insufficient drippings)
07 - ¼ cup flour
08 - ½ teaspoon salt, or to taste
09 - ¼ teaspoon pepper, or to taste

# Instructions:

01 - Brown the breakfast sausage in a cast iron skillet over medium heat. Once cooked, transfer to a plate and retain ¼ cup of drippings.
02 - Into the hot drippings in the same skillet, whisk in the flour. Stir steadily over medium heat for 5 to 10 minutes until it turns a golden hue. Gradually pour in the milk while whisking. Continue to stir the gravy as it thickens and begins to bubble.
03 - Meanwhile, toast the English muffins to a golden crisp while the gravy finishes cooking.
04 - Crack and scramble eggs in a non-stick pan; add a dash of milk if you want them softer and fluffier.
05 - Set oven broiler to high. On a baking tray, lay open muffins. Spoon on gravy, add scrambled eggs, a cheese slice, and some sausage.
06 - Place under the broiler just until the cheese is melted and bubbling. Serve hot and enjoy.
