Classic Egg Foo Young (Print Version)

# Ingredients:

→ Main Ingredients

01 - 4 eggs, beaten
02 - ½ pound cooked shrimp, chopped
03 - ½ cup onion, chopped
04 - ½ cup mushrooms, chopped
05 - 1 cup bean sprouts

→ Sauce and Seasonings

06 - 2 tablespoons soy sauce
07 - 1 teaspoon cornstarch
08 - Vegetable oil for frying

→ For Serving

09 - Beef gravy (jarred)
10 - Green onions, chopped for garnish

# Instructions:

01 - In a large skillet, sauté onions, mushrooms and bean sprouts in vegetable oil. Add shrimp.
02 - Stir in cornstarch and soy sauce.
03 - Add vegetable mixture to beaten eggs in a bowl. Stir gently. Mixture should have more vegetables than eggs and not be too runny.
04 - Heat oil in clean skillet. Form ¼ of mixture into pancake shape and fry until firm enough to flip. Cook other side until firm.
05 - Drain on paper towels. Serve topped with gravy and green onions, with soy sauce on the side.

# Notes:

01 - Can adjust vegetable to egg ratio if mixture is too runny
02 - Perfect for using leftover vegetables or protein
