Easy Crustless Blueberry Pie (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 1 cup plus 2 tablespoons granulated sugar, divided
02 - 1 cup all-purpose flour
03 - 1 teaspoon cinnamon
04 - 1/4 teaspoon salt

→ Wet Ingredients

05 - 1/2 cup unsalted butter, melted
06 - 2 large eggs
07 - 1 teaspoon vanilla extract
08 - 1/2 to 1 teaspoon almond extract

→ Fruit

09 - 2 1/4 cups fresh blueberries, divided

# Instructions:

01 - Preheat oven to 350°F. Spray 9-inch round pie dish with cooking spray.
02 - Whisk together 1 cup sugar, flour, cinnamon, and salt in large bowl.
03 - In separate bowl, mix melted butter, eggs, and extracts until well combined.
04 - Pour wet mixture into dry ingredients and stir to combine. Fold in 2 cups blueberries.
05 - Transfer to pie dish, top with remaining blueberries and sugar. Bake 34-39 minutes until set.

# Notes:

01 - Best with fresh blueberries, not tested with frozen
02 - Can be underbaked slightly for gooier center
03 - Keeps at room temperature for up to 5 days
