Easy Corn Fritters (Print Version)

01 - 2 medium fresh sweet corn, kernels removed
02 - ½ cup tapioca flour
03 - 3 cloves garlic, minced
04 - 1 spring onion, chopped
05 - 1 stalk celery, chopped
06 - 1 egg
07 - 1 tsp salt
08 - ½ tsp ground black pepper
09 - 1 tbsp water
10 - 1 tsp chicken stock powder

# Instructions:

01 - Cut the corn kernels off the cob using a knife. Place them in a large mixing bowl and set aside.
02 - Chop the spring onion and celery, then add them to the bowl. Add the remaining ingredients and stir the mixture evenly to combine.
03 - Heat oil in a large skillet over medium-high heat.
04 - Drop a spoonful of the batter into the heated skillet and flatten lightly with the back of the spoon. Repeat, leaving about 1 inch of space between each fritter. Fry for 2-3 minutes until the bottom turns golden brown, then flip and fry for an additional 2 minutes until all sides are golden brown and crispy.
05 - Remove cooked fritters from the pan and drain on paper towels. Continue with the remaining batter until done.
06 - Serve the fritters warm with your favorite dipping sauce.
