Cut the corn kernels off the cob using a knife. Place them in a large mixing bowl and set aside.

Chop the spring onion and celery, then add them to the bowl. Add the remaining ingredients and stir the mixture evenly to combine.

Heat oil in a large skillet over medium-high heat.

Drop a spoonful of the batter into the heated skillet and flatten lightly with the back of the spoon. Repeat, leaving about 1 inch of space between each fritter. Fry for 2-3 minutes until the bottom turns golden brown, then flip and fry for an additional 2 minutes until all sides are golden brown and crispy.

Remove cooked fritters from the pan and drain on paper towels. Continue with the remaining batter until done.

Serve the fritters warm with your favorite dipping sauce.
