Double Chocolate Whoopie Pies (Print Version)

# Ingredients:

01 - 2 cups plus 2 tablespoons sifted flour
02 - 1 teaspoon salt
03 - 1 teaspoon baking soda
04 - 1/2 cup cocoa powder
05 - 1 cup sugar
06 - 1/2 cup hot water
07 - 1/4 cup butter
08 - 1/4 cup shortening
09 - 1/2 cup sour milk
10 - 1 egg
11 - 1 teaspoon pure vanilla extract

→ Chocolate Fudge Filling

12 - 2 1/2 cups powdered sugar
13 - 1/2 cup cocoa powder
14 - 1/2 cup unsalted butter
15 - 2-3 tablespoons milk
16 - 1/2 teaspoon vanilla extract

# Instructions:

01 - Sift together flour, salt, baking soda, and cocoa powder. Set aside.
02 - In a large bowl, beat together shortening, butter, and sugar until creamy. Beat in the egg and vanilla extract.
03 - Add sour milk, hot water, and the dry ingredients to the wet mixture. Mix until fully combined.
04 - Scoop heaping tablespoonfuls of batter onto a greased or parchment-lined cookie sheet, spacing them at least 2 inches apart. Use a small ice cream or cookie dough scoop if available. Bake at 163°C (325°F) for 10-12 minutes or until the centers spring back when touched. Cool completely.
05 - Mix together powdered sugar, cocoa, unsalted butter, vanilla extract, and 2-3 tablespoons of milk until smooth. Add more milk if needed to achieve a thick but spreadable consistency.
06 - Spoon the fudge filling between two cookie sections and press together slightly to form a whoopie pie.
