→ For Frying and Serving

12 - Vegetable oil for frying
13 - Chocolate sauce for serving (optional)

# Instructions:

01 - Mix 1/2 cup sugar with 1/2 teaspoon cinnamon in a medium shallow bowl. Set aside.
02 - In a medium saucepan over medium heat, combine water, milk, vanilla, butter, salt, 2 tablespoons sugar, and 1/4 teaspoon cinnamon. Bring to a rolling boil, stirring often. Reduce heat to low.
03 - Add flour to the hot mixture, stirring constantly until it forms a smooth ball and dries slightly, about 2-3 minutes.
04 - Transfer dough to a large bowl and beat with a hand mixer for 2 minutes to cool. Add eggs one at a time, beating well after each, until smooth and creamy.
05 - Heat 2 inches oil to 360°F. Pipe 3-inch strips of dough into hot oil using a star tip. Fry until golden brown, about 1.5 minutes per side. Keep oil between 350-370°F.
06 - Drain on paper towels briefly, then roll in cinnamon-sugar mixture. Serve immediately, optionally with chocolate sauce.

# Notes:

01 - Keep oil temperature steady between 350-370°F for best results
02 - Don't overcrowd the pan while frying - work in small batches
