Mix 1/2 cup sugar with 1/2 teaspoon cinnamon in a medium shallow bowl. Set aside.

In a medium saucepan over medium heat, combine water, milk, vanilla, butter, salt, 2 tablespoons sugar, and 1/4 teaspoon cinnamon. Bring to a rolling boil, stirring often. Reduce heat to low.

Add flour to the hot mixture, stirring constantly until it forms a smooth ball and dries slightly, about 2-3 minutes.

Transfer dough to a large bowl and beat with a hand mixer for 2 minutes to cool. Add eggs one at a time, beating well after each, until smooth and creamy.

Heat 2 inches oil to 360°F. Pipe 3-inch strips of dough into hot oil using a star tip. Fry until golden brown, about 1.5 minutes per side. Keep oil between 350-370°F.

Drain on paper towels briefly, then roll in cinnamon-sugar mixture. Serve immediately, optionally with chocolate sauce.
