Preheat oven to 350°F.

Combine dijon, butter and honey in small bowl. Microwave about 20 seconds until butter is melted; stir to combine.

Slice croissants in half horizontally with serrated knife. Brush dijon butter over cut sides.

Layer croissant bottoms with cheese slice, ham, bacon, and another cheese slice. Add croissant tops and place on baking sheet.

Bake 10-15 minutes until cheese is melted and croissants are golden.

While croissants bake, whisk eggs, milk, salt, and pepper. Melt butter in nonstick skillet over medium heat. Add eggs and cook to soft scramble, 2-3 minutes.

After removing croissants from oven, add scrambled eggs to each sandwich. Garnish with fresh chives if desired.
