Croissant Breakfast Sandwiches (Print Version)

# Ingredients:

→ For the Spread

01 - 2 tablespoons dijon mustard
02 - 2 tablespoons salted butter
03 - 2 tablespoons honey

→ For the Sandwiches

04 - 4 large croissants
05 - 8 slices cheese (gouda, baby swiss, cheddar, etc.)
06 - 1/2 pound deli-sliced ham
07 - 8 slices cooked bacon

→ For the Eggs

08 - 5 large eggs
09 - Splash of milk
10 - Salt and pepper
11 - 1 tablespoon butter
12 - Fresh chives for garnish (optional)

# Instructions:

01 - Preheat oven to 350°F.
02 - Combine dijon, butter and honey in small bowl. Microwave about 20 seconds until butter is melted; stir to combine.
03 - Slice croissants in half horizontally with serrated knife. Brush dijon butter over cut sides.
04 - Layer croissant bottoms with cheese slice, ham, bacon, and another cheese slice. Add croissant tops and place on baking sheet.
05 - Bake 10-15 minutes until cheese is melted and croissants are golden.
06 - While croissants bake, whisk eggs, milk, salt, and pepper. Melt butter in nonstick skillet over medium heat. Add eggs and cook to soft scramble, 2-3 minutes.
07 - After removing croissants from oven, add scrambled eggs to each sandwich. Garnish with fresh chives if desired.
