Crockpot Beef Barley Soup (Print Version)

# Ingredients:

01 - 1 pound beef stew meat.
02 - 3 carrots, sliced.
03 - 3 celery stalks, sliced.
04 - 1 large onion, diced.
05 - 3 garlic cloves, minced.
06 - 8 cups beef broth.
07 - 14.5 ounces diced tomatoes.
08 - ¾ cup pearl barley.
09 - 1 teaspoon dried thyme.
10 - 2 bay leaves.
11 - Salt and pepper to taste.

# Instructions:

01 - Dice vegetables and mince garlic.
02 - Add all ingredients to crockpot.
03 - Cook on low 8-10 hours or high 4-5 hours until beef tender.
04 - Remove bay leaves, adjust seasoning.

01 - Optional: sear beef first.
02 - Use pearl barley for best texture.
03 - Fresh thyme optional.
