Crock-Pot Sweet & Sour Beef (Print Version)

# Ingredients:

01 - 2 pounds pre-cut beef stir fry meat
02 - 10 to 12 ounces bottled sweet and sour sauce
03 - 1 cup carrots, shredded
04 - 2 tablespoons yellow onion, shredded and squeezed dry

05 - 4 cups cooked rice
06 - 16 ounces frozen stir fry vegetables

# Instructions:

01 - Place the beef, shredded carrots, and onions in a 6-quart or larger slow cooker. Add the sweet and sour sauce and mix into the rest of the mixture.
02 - Cover the slow cooker and cook on LOW for 6 to 8 hours.
03 - About 30 minutes before the slow cooker is done, start cooking your rice on the stovetop or in a rice cooker.
04 - Cook the frozen stir fry vegetables according to package directions, either in the microwave or on the stovetop.
05 - Serve the cooked beef mixture with the sauce and vegetables over the cooked rice and enjoy.
06 - Place all ingredients (except rice and vegetables) into a gallon-sized zippered freezer bag. Lay the bag flat, squeeze out the air, seal, and label with recipe details and instructions. Freeze flat. Thaw in the refrigerator overnight or in cool water until partially thawed. Cook directly from the frozen state for 7 to 9 hours on LOW. Prepare rice and vegetables as described above before serving.
