In a large mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan, flour, one egg, green onions (if using), garlic powder, salt, and pepper. Mix until a thick dough forms.

On a lightly floured surface, roll the dough into logs about 1 inch thick and 3 inches long.

In a shallow bowl, beat the second egg. Place breadcrumbs in another shallow bowl.

Dip each potato stick into the beaten egg, then roll in breadcrumbs to coat evenly.

Heat about 1 inch of oil in a large skillet over medium heat.

Fry the sticks in batches for 2–3 minutes on each side or until golden and crispy. Do not overcrowd the pan.
