Crispy Hungarian Cheese Sticks (Print Version)

# Ingredients:

01 - 2 cups mashed potatoes (about 3 medium potatoes, cooked and mashed)
02 - 1 1/2 cups shredded cheddar cheese
03 - 1/2 cup grated Parmesan cheese
04 - 1/2 cup all-purpose flour
05 - 2 large eggs
06 - 1/4 cup chopped green onions
07 - 1/2 tsp garlic powder
08 - Salt and black pepper to taste
09 - 1 cup plain breadcrumbs
10 - Oil for frying (vegetable or canola)

# Instructions:

01 - In a large mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan, flour, one egg, green onions (if using), garlic powder, salt, and pepper. Mix until a thick dough forms.
02 - On a lightly floured surface, roll the dough into logs about 1 inch thick and 3 inches long.
03 - In a shallow bowl, beat the second egg. Place breadcrumbs in another shallow bowl.
04 - Dip each potato stick into the beaten egg, then roll in breadcrumbs to coat evenly.
05 - Heat about 1 inch of oil in a large skillet over medium heat.
06 - Fry the sticks in batches for 2–3 minutes on each side or until golden and crispy. Do not overcrowd the pan.
07 - Drain on paper towels and serve warm.
