# Ingredients:

01 - 1–2 large eggs
02 - 2–3 tablespoons crumbled Greek feta cheese

→ Optional accompaniments

03 - Sourdough bread or flour tortilla
04 - Fresh avocado slices

→ Optional seasoning

05 - Oregano, to taste
06 - Chili flakes, to taste

# Instructions:

01 - Heat a non-stick pan over medium heat.
02 - Distribute the crumbled feta cheese evenly across the pan.
03 - Crack the egg(s) gently on top of the melting cheese, spacing them evenly.
04 - Cook for 3–4 minutes until the egg whites are set and the feta is golden and crisp.
05 - If desired, use a wide spatula to gently flip the egg for an over-easy preparation.
06 - Carefully remove eggs from the pan, keeping the crispy cheese intact. Serve immediately with optional toppings or accompaniments.
