01 - 1.5 pounds salmon fillets, skin removed, cut into 1-inch bite-sized pieces
02 - 1 tablespoon olive oil
03 - 1 teaspoon garlic powder
04 - 1 teaspoon onion powder
05 - 1 teaspoon smoked paprika
06 - 0.5 teaspoon salt
07 - 0.5 teaspoon black pepper
08 - 0.25 teaspoon cayenne pepper, optional for extra heat

→ Bang Bang Sauce

09 - 0.5 cup mayonnaise
10 - 0.25 cup Thai sweet chili sauce
11 - 1 tablespoon sriracha sauce, adjust for heat preference
12 - 1 tablespoon honey
13 - 1 tablespoon fresh lime juice

→ Optional Garnish

14 - Fresh parsley or cilantro, chopped
15 - Green onions, sliced
16 - Sesame seeds

# Instructions:

01 - Pat the salmon fillets dry with paper towels. Remove any remaining skin and cut the fillets into 1-inch bite-sized pieces. Place the salmon in a large bowl, drizzle with olive oil, and evenly coat with garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using). Toss gently to combine.
02 - In a small mixing bowl, whisk together mayonnaise, Thai sweet chili sauce, sriracha, honey, and lime juice until smooth. Adjust the sauce for heat or sweetness as needed. Set aside.
03 - Heat a large non-stick skillet over medium-high heat and add a small amount of olive oil. Once hot, cook the salmon pieces in a single layer, working in batches if necessary to avoid overcrowding. Sear for 2-3 minutes per side, flipping gently to brown all sides, until golden and crispy on the outside and tender inside. Place cooked salmon on a paper towel-lined plate to absorb excess oil.
04 - Choose your method to coat the salmon: drizzle the sauce over the salmon bites on a serving platter, or toss the salmon bites in a bowl with the sauce to coat evenly.
