Crispy Baked Feta Pasta (Print Version)

# Ingredients:

→ Main Components

01 - 400 g dried pasta, such as penne, fusilli, or spaghetti
02 - 200 g block of feta cheese
03 - 225 g cherry tomatoes or halved regular tomatoes

→ Seasonings and Garnish

04 - 2.5 tablespoons extra virgin olive oil
05 - 3 garlic cloves, minced
06 - 1 teaspoon dried basil or a handful of fresh basil
07 - Salt, to taste
08 - Freshly ground black pepper, to taste
09 - Freshly grated Parmesan cheese, for garnish (optional)

# Instructions:

01 - Set the oven to 200°C and allow it to fully preheat.
02 - Combine cherry tomatoes, olive oil, minced garlic, salt, and pepper in a medium baking dish. Toss until tomatoes are well coated.
03 - Place the block of feta cheese in the center of the baking dish, nestling it among the seasoned tomatoes.
04 - Transfer the dish to the oven and bake for 25 to 30 minutes, until tomatoes soften and burst, and feta is golden and beginning to crisp on top.
05 - Meanwhile, cook pasta in a large pot of salted boiling water according to package instructions until al dente. Drain thoroughly and set aside.
06 - Remove the baked feta and tomatoes from the oven. Immediately mash feta and tomatoes together with a fork to form a creamy sauce.
07 - Add the cooked pasta to the baking dish and stir until evenly coated with the feta-tomato sauce. Adjust seasoning if necessary.
08 - Divide the pasta into bowls. Top with fresh basil and a sprinkle of grated Parmesan cheese, if desired. Serve warm.

# Notes:

01 - For extra depth of flavor, experiment with thyme, oregano, or a pinch of chilli flakes.
02 - Add roasted vegetables or grilled chicken to enhance the meal.
03 - Reserve a bit of pasta water to adjust sauce consistency if needed.
