You can either cook the tortellini according to package instructions, OR use a one-pan method: Cover the surface of a large, deep pan with 1 tablespoon olive oil, add the tortellini, and stir at medium-high heat for 30 seconds to 1 minute until they begin to turn golden-brown.

If using the one-pan method, add the milk to the pan with the tortellini, stir and cook for about 1 minute.

Add the sour cream, reduce the heat slightly, and stir for 2-3 minutes until the sauce begins to thicken.

Stir in all the vegetables and herbs - minced garlic, chopped scallions, chopped tomato, baby spinach, and chopped parsley or basil. Season with freshly ground black pepper.

Add the grated mozzarella cheese and stir well until it melts into the sauce, further thickening it. Taste and adjust seasoning with salt and pepper as needed. The recipe is particularly good with a generous amount of black pepper.

Remove from heat and serve immediately. Top each serving with freshly grated Parmesan cheese for extra flavor.
