01 -
Heat a large skillet over medium-high heat. Add the sausage and chopped onion. Cook, breaking up the sausage with a spoon, until browned and no longer pink, approximately 6-8 minutes. Drain any excess fat.
02 -
Reduce heat to medium-low. Stir in the minced garlic and cook for about 30 seconds until fragrant. Pour in the Alfredo sauce and marinara sauce. Sprinkle in the Italian seasoning and red pepper flakes. Stir thoroughly, ensuring to scrape up any browned bits from the pan bottom.
03 -
Add the frozen cheese tortellini to the skillet and mix until fully coated with sauce. Cover the pan and cook for 3-5 minutes, or until the tortellini are heated through and tender, stirring occasionally.
04 -
Turn off the heat and evenly sprinkle the shredded mozzarella cheese over the top. Cover the skillet until the cheese is completely melted and stretchy, or transfer to a preheated oven at 200°C for 2-3 minutes for a bubbly, golden finish.
05 -
Garnish with parsley flakes. Serve hot, directly from the skillet, ideally with crusty bread.
