Creamy Mushroom Soup (Print Version)

# Ingredients:

01 - 2 tablespoons unsalted butter.
02 - 1 tablespoon olive oil.
03 - 1 small onion, finely chopped.
04 - 2 cloves garlic, minced.
05 - 1 pound fresh mushrooms (button, cremini, or mix), sliced.
06 - 2 tablespoons all-purpose flour.
07 - 4 cups vegetable or chicken broth.
08 - 1 cup heavy cream or half-and-half.
09 - 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried.
10 - Salt and pepper to taste.
11 - Fresh parsley for garnish (optional).

# Instructions:

01 - Cook onion and garlic in butter and oil until softened, 3-4 minutes.
02 - Add mushrooms and cook until golden brown, 5-7 minutes.
03 - Sprinkle flour over mixture and cook 1-2 minutes.
04 - Gradually stir in broth and thyme, simmer 10-15 minutes.
05 - Stir in cream and simmer 5 more minutes, season with salt and pepper.
06 - Blend if desired, garnish with parsley and serve.
