Rinse shrimp thoroughly under cold water. Pat dry with paper towels and season evenly with salt and black pepper.

Melt 2 tablespoons butter in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Add seasoned shrimp to the skillet. Sear for 2 to 3 minutes per side until the shrimp turn pink and opaque. Remove shrimp and set aside.

In the same skillet, add remaining 2 tablespoons butter, chicken broth, and heavy cream. Stir well and bring to a gentle simmer.

Stir in Italian seasoning and season sauce with additional salt and black pepper as needed. Incorporate cherry tomatoes at this stage, if using.

Return shrimp to the skillet. Allow to simmer in the sauce for 2 to 3 minutes. If desired, mix in grated Parmesan cheese until melted and evenly blended.

Remove skillet from heat. Scatter chopped fresh parsley over the dish for a touch of colour and freshness.
