Creamy Chicken Bacon Gnocchi (Print Version)

# Ingredients:

01 - 6 Slices Chopped Up Bacon
02 - 1 Lb Boneless Skinless Chicken Breasts or Thighs, chopped into bite-sized pieces
03 - 2 tbs Salted Butter
04 - 1 Yellow Onion, Diced
05 - 6-7 Garlic Cloves, minced
06 - 1/3 Cup Sun-Dried Tomatoes In Italian Herb seasoned oil
07 - 1 Cup Chicken Broth
08 - 2 Cups Heavy Cream
09 - 5 oz Shaved Parmesan cheese
10 - 4 oz Fresh Spinach, roughly chopped
11 - 16 oz Package of shelf stable Basil Flavored Potato Gnocchi

→ Seasonings

12 - 1 tbs Garlic Powder
13 - 1 tbs Onion Powder
14 - 1 tbs Dried Oregano
15 - 1 tbs Dried Basil
16 - 1 tsp Red Pepper Flakes (optional)
17 - Salt and Pepper to taste

# Instructions:

01 - Brown the bacon in a skillet over medium heat. Remove with a slotted spoon and set aside. Add chicken to the bacon grease, season with salt and pepper, and cook until done. Remove and set aside.
02 - Add butter to the pan. Saute onion for about 5 minutes, then add garlic and cook until fragrant, 1-2 minutes.
03 - Stir in sun-dried tomatoes, chicken broth, heavy cream and seasonings (except salt and pepper). Simmer for 3-4 minutes.
04 - Add parmesan cheese and stir until melted, then add spinach and let it wilt down. Add chicken and bacon back in.
05 - In a small pot, boil gnocchi as directed on package. Reserve 1 cup of the cooking water. Drain gnocchi.
06 - Add gnocchi and reserved water to the chicken mixture. Stir well and simmer on lowest setting for about 10 minutes to thicken. Season with salt and pepper to taste.

01 - Save pasta water to help thicken the sauce
02 - Any flavor of gnocchi can be used
03 - Red pepper flakes are optional for heat
