Cranberry Bars (Print Version)

# Ingredients:

01 - 8 oz (2 1/4 cups) fresh cranberries.
02 - 2/3 cup sugar.
03 - 3 tbsp water.
04 - 2 cups flour.
05 - 1/2 tsp kosher salt.
06 - 1 cup butter, room temperature.
07 - 1/3 cup light brown sugar.
08 - 1 tsp vanilla extract.

# Instructions:

01 - Heat oven to 350°F.
02 - Cook cranberries, sugar, water over medium heat 15 minutes until thick.
03 - Set filling aside to cool.
04 - Sift flour and salt together.
05 - Beat butter until smooth. Add sugar and vanilla, beat until creamy.
06 - Mix in flour just until clumpy (not solid dough).
07 - Press 2/3 of dough in greased 8x8 pan. Prick with fork.
08 - Bake 17-18 minutes until light brown.
09 - Spread cranberry filling, leaving small border.
10 - Crumble remaining dough on top, press lightly.
11 - Bake 25-30 minutes until golden.
12 - Cut into 16 squares while warm. Cool completely in pan.

# Notes:

01 - Cut while warm for clean edges.
02 - Can use frozen cranberries.
03 - Keeps 3-4 days in airtight container.
