Cranberry Pecan Goat Cheese Balls (Print Version)

# Ingredients:

→ Cheese Base

01 - 8 ounces soft goat cheese
02 - 8 ounces cream cheese, softened

→ Seasonings

03 - 1 1/2 teaspoons cinnamon
04 - 1/8 teaspoon salt
05 - 1/4 cup honey, divided

→ Coating

06 - 1 1/3 cups chopped pecans, divided
07 - 1/4 cup minced fresh parsley
08 - 3/4 cup dried cranberries, chopped

# Instructions:

01 - Beat goat cheese, cream cheese, cinnamon, salt, and 2 tablespoons honey until light and fluffy. Fold in 1/3 cup pecans.
02 - Mix together parsley, cranberries, and remaining pecans in a small bowl.
03 - Roll cheese mixture into 1-inch balls, then coat each in the cranberry-parsley mixture.
04 - Arrange truffles on a non-stick surface and refrigerate for at least 20 minutes before serving.
