Crack Chicken Chili (Print Version)

# Ingredients:

01 - 2 1/2 cups chicken broth.
02 - 15.25 ounce can southwest corn with peppers, undrained.
03 - 10 ounce can Rotel tomatoes and chilies, undrained.
04 - 1 ounce packet ranch seasoning mix.
05 - 1 tablespoon onion powder.
06 - 1 tablespoon chili powder.
07 - 1 teaspoon kosher salt.
08 - 1 teaspoon black pepper.
09 - 3 medium chicken breasts.
10 - 15.25 ounce can black beans, drained.
11 - 1 1/4 cups crumbled bacon.
12 - 8 ounces cream cheese, cubed.
13 - 2 cups Colby-jack cheese, shredded.
14 - 1 1/2 tablespoons cilantro for garnish.

# Instructions:

01 - Spray crockpot with cooking spray or use liner.
02 - Combine broth, corn, Rotel, ranch mix, and seasonings.
03 - Place chicken, then beans, broth mixture, bacon, and cream cheese in crockpot.
04 - Cook on high 4 hours or low 6 hours.
05 - Remove and shred chicken, stir cream cheese into broth.
06 - Add shredded cheese and chicken back, garnish with cilantro.

# Notes:

01 - Don't drain corn or tomatoes.
02 - Can cook on high or low.
03 - Serve hot.
