# Ingredients:

01 - 1 cup yellow cornmeal
02 - ½ cup all-purpose flour
03 - ½ teaspoon baking powder
04 - ½ teaspoon salt
05 - ¼ teaspoon black pepper
06 - ½ teaspoon garlic powder
07 - ¼ teaspoon dried thyme or parsley

→ Wet Ingredients

08 - 1 small onion, finely chopped
09 - ¾ cup buttermilk or milk
10 - 1 egg

→ For frying

11 - Vegetable oil

# Instructions:

01 - In a large mixing bowl, whisk together the cornmeal, flour, baking powder, salt, black pepper, garlic powder, and dried herbs if using.
02 - Stir in the finely chopped onion and mix to coat the onion pieces in the dry ingredients.
03 - In a small bowl, beat the egg with the buttermilk.
04 - Pour the wet mixture into the dry ingredients and stir until a thick, scoopable batter forms.
05 - Heat a thin layer of vegetable oil in a skillet over medium heat until hot but not smoking.
06 - Drop heaping spoonfuls of batter into the skillet and flatten slightly with a spatula to form patties.
07 - Fry each side for 3–4 minutes until golden brown and crisp, adjusting heat as needed to avoid burning.
08 - Remove from the skillet and drain on paper towels. Serve warm, with your favorite dipping sauce such as ranch, sour cream, or hot sauce.

# Notes:

01 - For a richer taste and softer texture, use buttermilk instead of milk in the batter.
02 - To keep the patties warm while frying additional batches, place them in a 200°F (95°C) oven.
03 - Reheat leftover patties in an oven or air fryer to retain their crispness.
