Preheat oven to 350 degrees F.

Blend egg whites, cottage cheese, minced garlic, salt, garlic powder, and ¾ of shredded cheese.

Reserve 2 Tablespoons red peppers. Add remaining peppers and half the spinach, pulse 3-4 times.

Spray egg mold with nonstick oil. Add spinach, peppers, and cheese to each mold bottom. Fill ¾ full with egg mixture.

Place mold in baking dish with 2 inches warm water. Cover with foil. Bake 1 hour at 350°F.
