Classic Tiramisu (Print Version)

# Ingredients:

01 - 30g unsweetened cocoa powder.
02 - 24 ladyfingers (savoiardi).
03 - 100g brown sugar.
04 - 3 eggs, separated.
05 - 1 packet vanilla sugar.
06 - 250g mascarpone.
07 - 500ml strong black coffee, unsweetened.

# Instructions:

01 - Separate eggs. Set whites aside.
02 - Mix yolks, brown sugar and vanilla sugar until combined.
03 - Add mascarpone to yolk mixture, whisk smooth.
04 - Beat egg whites to stiff peaks.
05 - Gently fold whites into mascarpone mixture.
06 - Quick-dip ladyfingers in coffee, layer in dish.
07 - Spread mascarpone cream over ladyfingers.
08 - Repeat layers, ending with cream.
09 - Dust top with cocoa powder.
10 - Chill at least 4 hours.

# Notes:

01 - Better made day ahead.
02 - Don't soak ladyfingers too long.
03 - Use pasteurized eggs if concerned about raw eggs.
04 - Strong coffee works best.
