NY Style Cheesecake (Print Version)

# Ingredients:

01 - 1 1/2 cups graham cracker crumbs.
02 - 1/2 cup brown sugar.
03 - 5 tbsp unsalted butter, melted.
04 - 1 tsp vanilla extract.
05 - 32 oz cream cheese, softened.
06 - 1 cup white granulated sugar.
07 - 1/4 cup sour cream.
08 - 3 eggs, room temperature.
09 - 3/4 cup heavy whipping cream.
10 - 3 tbsp cornstarch.
11 - 2 tsp vanilla extract.
12 - For topping (optional):.
13 - 1 lb strawberries.
14 - 3/4 cup white granulated sugar.
15 - 1 tbsp fresh lemon juice.
16 - 1/4 cup water.
17 - 1 tsp vanilla extract.

# Instructions:

01 - Preheat oven to 325°F. Grease 9-inch springform pan and wrap outside with foil.
02 - Mix graham crumbs, melted butter, vanilla, brown sugar. Press into pan bottom and sides.
03 - Beat cream cheese until fluffy. Add sugar, eggs one at a time, then sour cream, vanilla, cream, and cornstarch.
04 - Place in water bath, bake 85-90 minutes until edges set with slight jiggle in center.
05 - Cool in turned-off oven 10 minutes, then counter 10 minutes, then refrigerate 6 hours.
06 - Cook chopped strawberries with sugar, lemon, water, vanilla for 10-15 minutes until thickened.
