Smooth Classic Hummus (Print Version)

# Ingredients:

→ Base

01 - 1/3 cup good-quality tahini
02 - 2-4 tablespoons cold water
03 - 2 tablespoons extra virgin olive oil
04 - 1 (15 ounce) can chickpeas, rinsed and drained

→ Seasonings

05 - 1/2 teaspoon ground cumin
06 - 3/4 teaspoon fine sea salt
07 - 2 medium cloves garlic, peeled and smashed
08 - juice of 1 lemon (2-3 tablespoons)

→ Optional Toppings

09 - Extra virgin olive oil for drizzling
10 - Fresh parsley, chopped
11 - Ground sumac or paprika
12 - Toasted pine nuts

# Instructions:

01 - Add tahini, cold water, olive oil, cumin, salt, garlic and lemon juice to food processor. Puree until smooth.
02 - Add chickpeas and puree 3-4 minutes, scraping bowl halfway, until smooth. Add water if needed for desired consistency.
03 - Taste and adjust salt, cumin, and lemon juice as needed.
04 - Serve immediately with desired toppings or refrigerate up to 3 days.

# Notes:

01 - Can use home-cooked chickpeas for smoother texture
02 - Simmering canned chickpeas optional but recommended
03 - Cold water helps create creamy texture
