Classic Filipino Chicken Adobo (Print Version)

# Ingredients:

01 - 8-10 skinless chicken thighs
02 - 1/2 cup of water or chicken stock
03 - 1/2 cup cane vinegar (or white vinegar or apple cider vinegar)
04 - 1/3 cup low-sodium soy sauce
05 - 2 tbsp brown sugar (optional)
06 - 6 garlic cloves
07 - 1 tbsp black peppercorns
08 - 4 bay leaves
09 - Avocado oil for searing
10 - Salt and pepper

# Instructions:

01 - Add oil to pan. Brown chicken on both sides, lightly seasoning with salt and pepper. Remove chicken once browned.
02 - Use paper towels to remove excess oil from pan.
03 - Add garlic and black peppercorns. Saute for one minute until fragrant.
04 - Add soy sauce, vinegar, water, sugar, and bay leaves. Return chicken to pan.
05 - Bring to boil, then reduce to low-medium simmer. Cover with lid and cook for 20 minutes.
06 - Uncover and increase heat to medium-high. Reduce braising liquid to desired consistency for about 5 minutes.
