Preheat oven to 190°C. Lightly grease a 23 x 33 cm baking dish.

In a large skillet over medium-high heat, cook ground beef and diced onion until beef is well browned. Drain excess fat.

Stir in the minced garlic and cook for 1 minute until aromatic.

Add tomato sauce, tomato paste, chili powder, cumin, salt, black pepper, and optional smoked paprika or cayenne. Stir to combine and simmer for 5 to 10 minutes until slightly thickened.

Spread half of the chili evenly into the bottom of the prepared baking dish.

Arrange the hot dog pieces evenly over the chili layer.

Drizzle mustard and ketchup over the hot dog layer if using.

Scatter shredded cheddar and optional mozzarella or pepper jack cheese over the layered dish.

Tear biscuit or crescent dough into chunks and distribute evenly over the top.

Pour the remaining chili over the dough and finish with an additional sprinkle of cheese.

Brush the top of the biscuit or dough pieces with melted butter.

Place in the oven and bake for 25 to 30 minutes until the casserole is bubbling and the top is golden brown.

Allow to cool for 5 minutes. Add desired toppings such as green onions, sliced jalapeños, crushed corn chips, sour cream, or diced pickles before serving.
