Cioppino (Fisherman's Stew) (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil.
02 - 1 medium onion, chopped.
03 - 2 cloves garlic, minced.
04 - 1 bell pepper, chopped.
05 - 1 cup dry white wine.
06 - 28 ounces crushed tomatoes.
07 - 2 cups seafood stock.
08 - 1 teaspoon dried oregano.
09 - 1 teaspoon dried basil.
10 - 1/2 teaspoon red pepper flakes.
11 - 1/2 pound white fish fillets.
12 - 1/2 pound shrimp, peeled.
13 - 1/2 pound mussels or clams.
14 - 1/2 pound scallops.
15 - 1/4 cup fresh parsley.
16 - 1 tablespoon lemon juice.

# Instructions:

01 - Sauté onion, garlic, pepper in oil until soft.
02 - Add wine, tomatoes, stock, herbs. Simmer 10-15 minutes.
03 - Add fish, shellfish. Cook covered 7-10 minutes until done.
04 - Add parsley and lemon juice. Serve with crusty bread.

01 - Customize with different seafood.
02 - Can add cream for richer broth.
03 - Serve with garlic toast.
