Peel the bananas and slice them into thin, even slices (about 1/8 inch thick) using a sharp knife or mandoline slicer for more consistent results.

In a small bowl, mix the granulated sugar and ground cinnamon together until well combined.

Lightly brush both sides of the banana slices with coconut oil (or melted butter), then sprinkle the cinnamon-sugar mixture evenly over both sides of each slice.

Place the coated banana slices in a single layer in the air fryer basket. Make sure the slices don't overlap to ensure even cooking and proper crisping. You may need to work in batches depending on the size of your air fryer.

Set the air fryer to 300°F (150°C) and cook for 10-15 minutes, flipping the banana slices halfway through the cooking time. Begin checking for doneness at around 12 minutes; they should be golden brown and slightly crisp. Keep in mind that the chips will continue to crisp up as they cool.

Remove the banana chips from the air fryer and let them cool completely on a wire rack. Once cooled, they can be served immediately or stored in an airtight container for up to 3 days.
