Preheat the oven to 175°C. Lightly grease a 23x23 cm baking dish.

In a mixing bowl, combine the diced apples with brown sugar, ground cinnamon, nutmeg, flour, lemon juice, and vanilla extract. Mix well and set aside.

In a separate bowl, beat the cream cheese with powdered sugar and vanilla extract until smooth and creamy.

Separate the cinnamon rolls and flatten each into a round disk about 10–13 cm in diameter using your hands or a rolling pin.

Place 8 flattened cinnamon rolls in the prepared dish, overlapping slightly to fully cover the bottom. Press seams together for a solid base.

Spread half of the apple mixture evenly over the cinnamon roll base, then dot or spread half the cream cheese mixture on top if using.

Flatten the remaining 8 cinnamon rolls and layer them over the apples and cream cheese.

Top with the remaining apple mixture and, if used, the rest of the cream cheese mixture.

Cover lightly with aluminium foil and bake for 25 minutes. Remove the foil and continue to bake for 10–15 minutes, or until the top is golden brown and the apples are tender.

Allow to cool slightly. Drizzle with the reserved cinnamon roll icing before serving.
