Dark Coffee Cookies (Print Version)

# Ingredients:

01 - 113 grams unsalted butter, softened (1/2 cup).
02 - 200 grams granulated sugar (1 cup).
03 - 2 eggs.
04 - 1 tablespoon coffee extract.
05 - 145 grams all purpose flour (1 1/8 cup).
06 - 60 grams cocoa powder (1/2 cup).
07 - 2 teaspoons instant espresso powder.
08 - 1/2 teaspoon baking soda.
09 - 1/4 teaspoon kosher salt.
10 - 175 grams chopped dark chocolate (1 cup).
11 - 150 grams chocolate-covered espresso beans (1 cup).
12 - Chocolate sprinkles, optional.

# Instructions:

01 - Beat butter and sugar until smooth. Add eggs and coffee extract.
02 - Sift flour, cocoa, espresso powder, baking soda, and salt. Mix into wet ingredients.
03 - Fold in chopped chocolate and espresso beans.
04 - Wrap dough and chill at least one hour.
05 - Form into golf ball-sized balls. Roll in sprinkles if using.
06 - Bake at 375°F for 12-14 minutes. Cool on sheet 10 minutes then transfer to rack.

01 - Dough can be chilled overnight.
02 - Cookies keep 5 days at room temperature.
03 - Can be frozen between parchment paper.
