Spinach Casserole (Print Version)

# Ingredients:

01 - 2 large boneless skinless chicken breasts.
02 - 2 tbsp olive oil, divided.
03 - 3 cloves garlic, minced.
04 - 1 tbsp Italian seasoning.
05 - 1/4 tsp salt.
06 - 1/2 tsp black pepper.
07 - 2 cups fresh spinach.
08 - 8 oz cream cheese, softened.
09 - 1 cup shredded mozzarella cheese, divided.
10 - 1/2 cup Parmesan cheese (optional).

# Instructions:

01 - Preheat oven to 400°F, grease baking dish.
02 - Cut chicken into 4 even cutlets.
03 - Marinate chicken in oil, garlic, seasonings for 15-30 mins.
04 - Wilt spinach in olive oil.
05 - Mix cream cheese, spinach, half mozzarella, Parmesan.
06 - Arrange chicken in baking dish.
07 - Top with cream cheese mixture.
08 - Sprinkle remaining mozzarella.
09 - Bake 20-30 minutes until done.
10 - Rest 5 minutes before serving.

# Notes:

01 - Use chicken cutlets for even cooking.
02 - If using frozen spinach, drain well to prevent excess moisture.
