Chicken Scampi Garlic Parmesan Rice (Print Version)

# Ingredients:

→ Chicken Scampi

01 - 2 boneless, skinless chicken breasts
02 - 2 tbsp olive oil
03 - 3 tbsp butter
04 - 4 cloves garlic, minced
05 - ½ cup chicken broth
06 - ¼ cup white wine (optional)
07 - 2 tbsp lemon juice
08 - 1 tsp lemon zest
09 - 1 tsp Italian seasoning

→ Garlic Parmesan Rice

10 - 1 cup long-grain white rice
11 - 2 cups chicken broth
12 - ½ cup heavy cream
13 - ½ cup grated Parmesan cheese
14 - 1 tbsp butter

# Instructions:

01 - Cook rice with garlic and chicken broth. Once the rice is tender, stir in heavy cream, Parmesan cheese, and butter until creamy and well combined.
02 - Heat olive oil in a pan over medium heat. Sauté chicken breasts until golden brown and fully cooked, then set aside.
03 - In the same pan, melt butter and sauté minced garlic. Add chicken broth, lemon juice, and lemon zest, then simmer to reduce slightly.
04 - Return chicken to the pan with the sauce and allow to simmer briefly. Garnish with parsley if desired.
05 - Serve the chicken on top of the creamy garlic Parmesan rice. Enjoy your meal!

# Notes:

01 - You can substitute white wine with additional chicken broth for a non-alcoholic version.
02 - To add heat, include red pepper flakes or cayenne pepper to the sauce.
