Zucchini Cheese Fritters (Print Version)

# Ingredients:

01 - 3 tablespoons canola oil for cooking.
02 - 2 cups shredded zucchini, squeezed (2 large zucchini, around 1.5 lbs).
03 - 1 cup Panko bread crumbs.
04 - 2 eggs.
05 - 1/3 cup fresh grated Parmesan cheese.
06 - 1/4 cup finely shredded Mozzarella cheese.
07 - 2 garlic cloves.
08 - Salt.
09 - Fresh cracked black pepper.

# Instructions:

01 - Grate zucchini using a box grater on the large holes side. Transfer to a mesh bag or cheese cloth and squeeze out as much liquid as possible.
02 - Put squeezed zucchini in a mixing bowl and add all other ingredients. Mix thoroughly until well combined.
03 - Preheat a large pan over medium heat, then lower temperature slightly. Add oil to the pan.
04 - Use an ice cream scoop to portion the mixture. Shape gently with hands and place in the pan.
05 - Cook 4-6 minutes per side, flipping only once to prevent breaking. Add more oil between batches if needed.

# Notes:

01 - These fritters can be made gluten-free by using gluten-free bread crumbs. 4C brand plain bread crumbs work well as a Panko substitute.
02 - Squeeze out as much liquid as possible from the zucchini to prevent soggy fritters.
