Grate zucchini using a box grater on the large holes side. Transfer to a mesh bag or cheese cloth and squeeze out as much liquid as possible.

Put squeezed zucchini in a mixing bowl and add all other ingredients. Mix thoroughly until well combined.

Preheat a large pan over medium heat, then lower temperature slightly. Add oil to the pan.

Use an ice cream scoop to portion the mixture. Shape gently with hands and place in the pan.

Cook 4-6 minutes per side, flipping only once to prevent breaking. Add more oil between batches if needed.
