Slice the onions into 1/2-inch thick rings. Carefully separate the layers and set aside the largest outer rings. Match pairs of rings for stuffing.

Cut the mozzarella cheese into strips that fit snugly between two onion rings. Place a smaller onion ring inside a larger one and press a cheese strip in the gap. Repeat for all rings and cheese.

Place the stuffed onion rings on a parchment-lined tray. Freeze for 1 hour to help the cheese stay in place during frying.

Set up a dredging station with three bowls: one with flour, one with beaten eggs, and one with a breadcrumb mixture of garlic powder, paprika, and salt. Dip each frozen ring into flour, then egg, then breadcrumbs. Repeat egg and breadcrumb coating for extra crunch.

Heat vegetable oil in a deep pan or fryer to 175°C (350°F). Fry the rings in batches for 2–3 minutes per side, or until golden brown and crispy. Avoid overcrowding the pan.

Remove rings from the oil and drain on a paper towel-lined plate. Garnish with chopped parsley and serve hot with warm marinara sauce for dipping.
