Ranch Chicken Bake (Print Version)

# Ingredients:

01 - 4 slices thick cut bacon, diced.
02 - 1 tablespoon vegetable oil.
03 - 1 tablespoon butter.
04 - 4 chicken breasts (1 pound total), pounded to 1/4-inch thickness.
05 - Salt and fresh ground pepper.
06 - 1/2 teaspoon garlic powder.
07 - 1/2 teaspoon smoked or sweet paprika.
08 - 4 ounces cream cheese, softened.
09 - 1/4 teaspoon garlic powder.
10 - 1/4 teaspoon onion powder.
11 - 1/4 teaspoon dried dill weed.
12 - 1/2 teaspoon dried chives.
13 - 4 ounces shredded cheddar cheese.
14 - Chopped fresh parsley.
15 - Sliced green scallions.

# Instructions:

01 - Heat oven to 400°F. Grease 9x13 baking dish. Cook diced bacon until crispy, reserve fat.
02 - Season pounded chicken with salt, pepper, garlic powder, and paprika. Cook in bacon fat and oil for 2-3 minutes per side until golden.
03 - Combine cream cheese with garlic powder, onion powder, dill weed, and chives.
04 - Top chicken with cream cheese mixture, half the bacon, and shredded cheese. Place in baking dish.
05 - Bake uncovered for 15 minutes until chicken is cooked and cheese is melted. Top with remaining bacon, parsley, and scallions.

01 - Can use 1 tablespoon ranch seasoning mix instead of individual herbs.
02 - Great for keto diet with only 4g carbs per serving.
03 - Can use mix of white and yellow cheddar cheese.
