Cheesy Fiesta Potato Skillet (Print Version)

# Ingredients:

→ Potatoes

01 - 5 medium potatoes, peeled and cubed
02 - Olive oil, as needed
03 - Salt, pepper, garlic powder, and paprika, to taste

→ Meat

04 - 1 lb ground beef
05 - 1/2 tsp salt
06 - 1/2 tsp black pepper
07 - 1/4 tsp cayenne pepper
08 - 2 tsp chili powder
09 - 1 tsp cumin
10 - 1 tsp paprika
11 - 1 tsp dried cilantro
12 - 1 tbsp minced garlic

→ Toppings

13 - 1 1/2 cups microwaved white Queso
14 - Sour cream, as desired
15 - Pico de Gallo, as desired
16 - Fresh cilantro, for garnish

# Instructions:

01 - Peel, wash, and cube the potatoes. Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika in a large bowl.
02 - Place potatoes in an air fryer and cook at 400°F (200°C) for 20-25 minutes, shaking occasionally for even cooking.
03 - Heat a skillet over medium-high heat. Add ground beef and cook until browned. Drain excess grease. Season with salt, black pepper, cayenne pepper, chili powder, cumin, paprika, dried cilantro, and minced garlic. Stir well to combine.
04 - Combine cooked potatoes and ground beef in the skillet. Pour warmed white queso over the mixture and stir gently to coat.
05 - Top with fresh cilantro. Serve each plate topped with sour cream and Pico de Gallo. Enjoy!
