Cheesy Cajun Garlic Rotini (Print Version)

01 - 2 boneless, skinless chicken breasts, cut into bite-sized chunks
02 - 12 oz rotini pasta
03 - 2 tbsp olive oil
04 - 2 tbsp Cajun seasoning
05 - 1 tsp garlic powder
06 - 1/2 tsp onion powder
07 - Salt and pepper to taste

08 - 4 cloves garlic, minced
09 - 1 tbsp butter
10 - 1 cup heavy cream
11 - 1/2 cup chicken broth
12 - 1 cup shredded mozzarella cheese
13 - 1/2 cup grated Parmesan cheese
14 - 1/2 cup shredded cheddar cheese
15 - Fresh parsley, chopped (for garnish)

# Instructions:

01 - Bring a large pot of salted water to a boil. Cook rotini pasta according to package directions until al dente. Drain and set aside.
02 - In a large skillet, heat olive oil over medium-high heat. Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Add chicken to skillet and cook until browned and fully cooked, about 6-7 minutes. Remove from skillet and set aside.
03 - In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.
04 - Stir in chicken broth and heavy cream, then bring to a simmer. Add mozzarella, Parmesan, and cheddar cheese. Stir until the sauce is smooth and cheesy.
05 - Add cooked rotini and chicken back into the skillet. Toss everything until well-coated in the cheesy Cajun garlic sauce. Let simmer for 2-3 minutes to blend flavors.
06 - Garnish with parsley and serve hot with extra cheese on top if desired.

01 - For a spicier version, add more Cajun seasoning or a pinch of red pepper flakes to the sauce.
