Bring a large pot of salted water to a boil. Cook rotini pasta according to package directions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium-high heat. Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Add chicken to skillet and cook until browned and fully cooked, about 6-7 minutes. Remove from skillet and set aside.

In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.

Stir in chicken broth and heavy cream, then bring to a simmer. Add mozzarella, Parmesan, and cheddar cheese. Stir until the sauce is smooth and cheesy.

Add cooked rotini and chicken back into the skillet. Toss everything until well-coated in the cheesy Cajun garlic sauce. Let simmer for 2-3 minutes to blend flavors.

Garnish with parsley and serve hot with extra cheese on top if desired.
