01 - 2 medium zucchini, sliced into 1.2 cm planks or rounds
02 - 1 ripe tomato, sliced

03 - 100 grams shredded mozzarella cheese
04 - 25 grams grated Parmesan cheese (optional)

→ Oils & Seasonings

05 - 2 tablespoons (30 ml) extra virgin olive oil
06 - 0.5 teaspoon (3 grams) salt
07 - 0.25 teaspoon (1 gram) freshly cracked black pepper
08 - 0.5 teaspoon (1.5 grams) garlic powder
09 - 1 teaspoon (2 grams) Italian spice mix (oregano, thyme, basil)

→ Optional Garnishes

10 - Smoked paprika
11 - Fresh basil leaves

# Instructions:

01 - Set oven to 200°C. Line a baking sheet with parchment paper.
02 - Slice zucchini into 1.2 cm planks or rounds. Gently pat each piece dry with a paper towel.
03 - Arrange zucchini in a single layer on the tray. Lightly brush each piece with olive oil. Evenly sprinkle salt, black pepper, garlic powder, and Italian spice mix.
04 - Place a tomato slice on each zucchini piece. Generously top with shredded mozzarella and a sprinkling of Parmesan.
05 - Bake for 10–12 minutes, until cheese is melted and golden. For a crispier top, broil for an additional 1–2 minutes if desired.
06 - Allow zucchini bites to cool on the tray for 5 minutes. Transfer to a platter. Garnish with smoked paprika or fresh basil if using. Serve warm or at room temperature.
