Lay each tortilla flat on a clean work surface. Microwave each for 10 seconds if needed to enhance flexibility and prevent tearing during rolling.

Brush each tortilla evenly with the garlic butter mixture. Distribute crumbled bacon, followed by shredded cheddar and mozzarella, across the surface, ensuring the mixture reaches the edges. Sprinkle fresh chives over the filling if using.

Tightly roll each tortilla into a spiral, maintaining even tension to secure the filling. Arrange seam-side down on a parchment-lined baking tray to maintain shape.

Brush rollups with remaining garlic butter. Transfer the tray to the centre rack of an oven preheated to 190°C. Bake for 12–15 minutes until the tortillas are crisp and golden and the cheese is melted and bubbling.
