Carrot Cake (Print Version)

# Ingredients:

01 - 2 cups all-purpose flour.
02 - 2 cups granulated sugar.
03 - 2 teaspoons baking powder.
04 - 1 1/2 teaspoons baking soda.
05 - 1 teaspoon salt.
06 - 1 teaspoon ground cinnamon.
07 - 1/2 teaspoon ground nutmeg.
08 - 1/4 teaspoon ground ginger.
09 - 1 cup vegetable oil.
10 - 4 large eggs.
11 - 3 cups grated carrots.
12 - 1 cup crushed pineapple, drained.
13 - 2 teaspoons vanilla extract.
14 - 1 cup chopped walnuts.

# Instructions:

01 - Heat oven to 350°F. Grease two 9-inch cake pans.
02 - Whisk flour, sugar, leaveners, salt and spices.
03 - Mix in oil and eggs until combined.
04 - Stir in carrots, pineapple, vanilla and nuts.
05 - Divide between pans, bake 30-35 minutes.
06 - Rest 10 minutes in pans, then cool completely.

01 - Grate carrots finely.
02 - Use room temperature eggs.
03 - Can use gluten-free flour.
